Banana Thoran
Finely chopped banana stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 6 servings
- 4 nos Raw bananas
- 1/2 tsp Turmeric powder
- 2 tbsp Coconut — grated
- 2 nos Green chillies
- 1/2 piece Ginger — optional
- 1/2 Red onion
- 1/2 tsp Mustard seeds
- 2 nos Whole red chillies (Kollamulaku)
- Curry leaves A, a few
- Oil
- Salt, to taste
Preparation
Step 1
Cut raw banana into small pieces, add turmeric, salt and very little water and cook for 5 - 7 minutes.
Step 2
Meantime, crush cut onions, grated coconut, ginger, green chillies and set aside.
Step 3
Pour oil into a kadai and heat it or wok.
Step 4
Add mustard, whole red chillie, and curry leaves.
Step 5
Add the cooked banana and all the crushed ingredients and fry well.
Step 6
Add salt according to taste.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
