A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.

- 1/2 cup All purpose flour Maida
- 2 tbsp Cocoa
- 1/2 tsp Baking powder
- 1/4 cup Sugar
- 1/4 cup Butter
- 1/2 cup Banana mashed, Poovan
- 2 nos Eggs
- 1/2 cup Milk
Preparation
Step 1
Sift together maida, cocoa and baking powder.
Step 2
Beat well the egg yolks with sugar.
Step 3
Add the mashed banana, milk and maida flour.
Step 4
Fold in the egg whites and blend well.
Step 5
Pour the contents into a greased pudding dish and cover the mouth with grease proof paper.
Step 6
Steam the banana pudding for about 1 1/2 hours until set.

Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
