Banana Jam
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 5 servings
- 2 kg Ripe bananas Palayamkodan
- 600 g / Sugar
- 4 tbsp Lemon juice
- 1 nos Clove (Grambu)
- Cochinel red color
Preparation
Step 1
Remove the outer skin of the bananas and chop into small pieces.
Step 2
Get a vessel and put the banana pieces into it. Pour water sufficient enough to cook. Boil for sometime in medium heat and take it off the heat when done.
Step 3
Sieve the cooked bananas through a clean cloth.
Step 4
Into the banana syrup add sugar, lemon juice and clove. Stir continuously and boil in medium heat. Remove the scum that deposits on the surface.
Step 5
After the syrup has achieved a thick consistency add the red color. Remove from fire.
Step 6
Pour the hot jam into clean dry bottles. Place these bottles on a wooden piece while filling with jam. Cool the jam and close tightly with lid.
Step 7
Banana jam is ready.homemade jam with bread etc.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
