Banana Fillings
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 8 servings
- Banana : 5 nos
- Egg : 3 nos
- Coconut : 1 cup
- Dates : 10 or 12 dates — chopped
- Almonds : 10 or 12 almonds — chopped
- Sugar : 1 cup
- Elaichi powder : one pinch
- Ghee, to taste
- Oil — for frying
Preparation
Step 1
Place a pan on the stove and pour some ghee in it.
Step 2
Break each egg and put them in pan.Stir Continually.
Step 3
Add sugar and keep on stirring.
Step 4
After some time add coconut to it and continue stirring.
Step 5
Add dates and almonds to it and stir them.
Step 6
Put a pinch of cardamom powder over it. And off the stove.
Step 7
Now take a banana and cut the center of it.
Step 8
Put the mixture into it.
Step 9
Do this for all the bananas.
Step 10
In a large mixing bowl, of flour.
Step 11
Put a pinch of salt and some sugar in flour. Add some water and mix them to make a thick texture.
Step 12
Spread the flour mixture over the bananas.
Step 13
Fry them in oil.
Step 14
Cut it into pieces and serve hot.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
