Banana Ada
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 3 servings
- 2 nos Banana
- 3 nos Eggs
- 2 tsp Sugar
- Oil — for deep frying
Preparation
Step 1
Cook banana in water.
Step 2
Add sugar into egg and beat it well.
Step 3
Make an omlette using the egg mixture.
Step 4
Scramble it well.
Step 5
Mash the cooked banana.
Step 6
Get a little from the banana mixture and make balls off it.
Step 7
Spread it out and place the egg mixture on it.
Step 8
Close this to one end.
Step 9
Repeat the procedure for the rest of the mixture.
Step 10
Fry the above in hot oil.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
