Baked Pumpkin Cake
Pumpkin, sugar, eggs and other ingredients are cooked together and baked.

- 13/4 cup All purpose flour Maida
- 250 g Pumpkin
- 2 nos Eggs
- 11/4 cup Sugar
- 3/4 cup Shortening
- 1 tsp Baking powder
- 1/4 tsp Cloves — powdered
- 1/4 tsp Cinnamon — powdered
- 1/2 cup Raisins — chopped
- 1/2 cup Cashew — chopped
- 1/2 cup Almonds — chopped
- 3/4 cup Water
- Salt, to taste
- 1 tsp Vanilla essence
- 1/2 tsp Orange color
- 1 cup Ready made cream
Preparation
Step 1
For preparing baked pumpkin bread, beat pumpkin, water and egg together till fluffy. Set aside.
Step 2
Blend shortening and sugar, vanilla essence, color till smooth. Add the pumpkin mixture and Stir everything together thoroughly.
Step 3
Now stir in all the other ingredients: maida flour, baking powder, cloves powder, cinnamon powder, raisins, nuts and required salt. Fold everything together gently.
Step 4
Beat the cream into smooth paste. Set aside.
Step 5
Pour the mixture into a greased baking tray and Let it cook for 40 minutes in 350 degrees.
Step 6
Spread the cream over the baked pumpkin cake, a Tea time snack, is ready.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
