Baigan Fry
A proper Kerala fry — mixed tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 4 servings
- 8 nos Brinjal Vazhuthananga
- 3 tsp Salt
- 4 tsp Chilly powder
- Oil — for frying
Preparation
Step 1
Slice beinjals into 4 pieces(length-wise).
Step 2
Marinate them for 20 minutes with salt and chilly powder.
Step 3
Fry in vegetable oil.
Step 4
This can be done using sliced potatoes and bitter gourd too.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
