Badam N Orange Cake
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 4 servings
- 180 g Eggs
- 100 g Sugar Desire
- 180 g Badam — powdered
- 45 g All purpose flour Maida
- 1/2 tsp Baking powder
- 30 g Orange rind — grated
- 180 g Fresh butter melted
- Whipped cream, to taste
Preparation
Step 1
Preheat the oven to 180 degree C.
Step 2
Blend desire sugar and eggs till soft and fluffy.
Step 3
Into this mixture pour powdered badam, maida, baking powder and grated orange rind. Mix gently.
Step 4
Grease a cake tin and pour the mixture. Bake in the preheated oven until golden brown.
Step 5
Cool the cake and serve with whipped cream.
Step 6
Badam n orange cake is ready.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
