Bachelors Special Spicy Chicken Curry
Cooked low and slow until the masala melds into the gravy, this chicken curry carries the unmistakable warmth of Kerala spices — black pepper, curry leaves, and coconut. Pair it with steaming rice and a crisp pappadam.
Ingredientsfor 4 servings
- 500 g Chicken
- 3 Onion
- 2 Tomato
- 3 Green chilly
- 5 Pods Garlic
- Coriander leaves, to taste
- Curry leaves, to taste
- 200 g Shallots
- 1/2 inch Ginger
- 1 tsp Coriander powder
- 1 tsp Chilly powder
- 1/4 tsp Turmeric powder
Preparation
Step 1
Mix all the ingredients except coriander leaves and curry leaves together in a vessel.
Step 2
Cook it covered till chicken is well cooked. Don¦t add water.
Step 3
Add coriander leaves and curry leaves. Stir everything together thoroughly and take it from flame.
Step 4
Serve it hot.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
