Ayala Curry Using Mango
Fish curry made with Ayala meen is a spicy dish that is famous in kerala prepared with raw mango. The raw mango's sour taste is very different from the regular tamarind taste. This ayala curry goes very well with hot rice.
Ingredientsfor 3 servings
- Fish half kg, ayala
- 1 Mango
- 1 Onion
- 1 inch Ginger
- 2 Cloves garlic
- 2 sprig Curry leaves
- 1 Tomato
- Salt, to taste
- 2 tsp Coriander powder
- 2 tsp Chilly powder
- 1 tsp Turmeric powder
- Oil, to taste
- 2 cup Water
Preparation
Step 1
Heat a kadai and add oil to it.
Step 2
Add onion ginger,garlic and tomato to it give it a good stir.
Step 3
Add curry leaves and mango to it.
Step 4
Add salt.
Step 5
Add coriander powder.
Step 6
Cook it, stirring well.
Step 7
Add chilly powder and turmeric powder.
Step 8
Cook it, stirring well.
Step 9
Add 2 cups of water.
Step 10
When it boils.
Step 11
Add the fish one by one.
Step 12
Close the pan and let it get cooked.
Step 13
When the oil gets separated and the fish is nicely cooked, turn off the heat.
Step 14
Serve while still hot with white rice.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
