Aravana Payasam
Aravana Payasam also fondly termed ‘Nei Payasam’ is an important ‘prasadam’ offered at the famous pilgrim centre ‘Sabarimala’. and the ghee flavored payasam will make you tempt for more and more.
Ingredientsfor 4 servings
- 2 cup Rice crushed red rice would taste better - champa or any white rice if available (pachari)
- Water to cook rice
- 1 cup Ghee
- 4 cup Jaggery (Sharkkara)
- 1 tsp Cardamom(powdered (Elakka)
- 1 small Raisins Onakka munthiri
- 10 - Cashews
Preparation
Step 1
For preparing the delicious dessert, first wash rice thoroughly in water and strain properly. Make the rice well dried so no water particles are left. If water is present it will burst when rice is fried.
Step 2
Fry the rice in 4 tsp of ghee so that the rice gets the ghee smell. Take care that the rice is not over fried.
Step 3
Cook the rice by adding water appropriately and make sure it is not over cooked.
Step 4
Add half cup of ghee to the rice now and blend the rice and ghee on a low flame.
Step 5
Slow cooking makes this payasam very tasty.
Step 6
Add jaggery to this rice and cook for some more time making sure that rice is not over cooked.
Step 7
Add the rest of the ghee slowly to this, blending so well, on low heat so that the rice, jaggery and ghee blends together and the ghee starts coming out from the sides of the pan.
Step 8
Garnish with raisins and cashews.

Tip
Never rush the milk reduction by increasing the heat. Scorched milk adds a bitter undertone that ruins the entire payasam.
