Appam - Kerala Style
Lacy edges, spongy centre — appam is fermented rice batter swirled in a curved pan until it forms a bowl-shaped pancake. The slight tang from fermentation pairs perfectly with a coconut stew or egg curry.
Ingredientsfor 3 servings
- 1 cup Rice soaked for at least 4 hrs to make good appam
- 2 tbsp Cooked rice
- ½ Scraped coconut
- Yeast
- Sugar
- Salt, to taste
Preparation
Step 1
Make a batter of rice, coconut and cooked rice.
Step 2
You can use water or coconut milk. The batter should not be too watery.
Step 3
Add yeast and sugar to warm water and dissolve.
Step 4
Add this to the batter for appam and keep for about 6 hrs.
Step 5
Just before making appam, add salt and little sugar.
Step 6
You can serve appam with milk or coconut poured on top of it with sugur.
Step 7
Serve appam hot.
Tip
The swirling motion takes practice. Your first two appams will likely be imperfect — consider them warm-up rounds.
