Ada Pradaman With Home Made Ada
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 6 servings
- 1/2 cup Raw rice
- 1 cup Sugar for pal adai pradaman
- 1/2 cup Sugar
- And
- 1/2 cup Jaggery for pradaman with coconut milk (Sharkkara)
- 1 large Coconut for coconut milk pradaman
- 2 tsp Ghee
Preparation
Step 1
For making the batter for ada:-.
Step 2
First method:- 1)Soak rice for 1 hr, strain very well and dry in a cloth for 2 hrs.
Step 3
Grind it to a fine powder in a mixer grinder and sieve through a fine sieve.
Step 4
To this, add 2 tsp melted ghee, 2 tsp sugar & medium hot water to get the consistency of dosa batter.
Step 5
Second method:- 1)Soak rice for 1 hr, strain & grind very fine adding water little by little.
Step 6
Add 2 tsp melted ghee & 1 tsp maida & make it to the consistency of dosa batter.
Step 7
For making ada:- 1)Take plantain leaves & cut them into 6" squares roughly.
Step 8
Show them on the gas for a few seconds to make them flexible.
Step 9
Boil plenty of water in a big broad vessel like pressure cooker.
Step 10
Get 2 tbsp batter and spread on the back side of the leaf.
Step 11
Roll it and tie with strings on both ends and immediately drop in boiling water.
Step 12
Do this, till the whole batter is used up.
Step 13
When they are well cooked, they float on top.
Step 14
Alternately, you can steam them 3 or 4 at a time in a steamer.
Step 15
Remove, strain and scrape out the adas and wash in plenty of water 3 or 4 times changing the water to remove the stickiness.
Step 16
Chop fine.
Step 17
For making coconut milk pradaman:-.
Step 18
Grate the coconut & take 1/4 cup of 1st milk, 1 1/2 cups of 2nd milk and 2 cups of 3rd milk.
Step 19
Heat up the vessel.
Step 20
Add 3rd milk, jaggery and sugar and boil on a medium flame for about 10 minutes.
Step 21
Add 2nd milk and let it bubble for about 5 minutes.
Step 22
Add the 3rd milk and remove at once from the stove, stirring thoroughly.
Step 23
Add 1 tsp of cardamom powder and Stir everything together thoroughly.
Step 24
Home made ada is very soft & well worth the trouble of making.
Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
