Ada Dosa
A protein rich pancake from the South Indian cuisine. The ada recipe shared here is a basic recipe which is usually prepared. Each household has their own proportions and the types of lentils they use.
Ingredientsfor 5 servings
- 1/2 cup Raw Rice
- 1 cup Boiled rice
- 1/4 cup Bengal gram (Kadalaparippu)
- 1/4 cup Red and Black gram Thuvaraparippu and both together (Uzhunnuparippu)
- Oil
- 2 nos Onion medium
- 3 nos Red chillies or
- 1/4 tsp Asafoetida powder (Kayam)
- 2 Stems Curry leaves
- 2 sprig Coriander leaves
Preparation
Step 1
Soak the rice and daals for few hours.
Step 2
Grind coarsely all the ingredients except for one onion and add salt to your taste to the batter.
Step 3
Chop finely the other onion and add it to the batter and make it into a consistency of dosa batter.
Step 4
Make nice thin dosas, pour oil on the sides and make it crispy.
Step 5
Goes well with Pudhina chutney.
Tip
A well-seasoned cast iron or non-stick tawa makes all the difference. If the dosa sticks, your pan needs more seasoning or the temperature is too low.
