Ada
An recipe of Kerala. It is steamed in banana leaf and has a wonderful flavor.
Ingredientsfor 4 servings
- 2 cup Rice Flour
- 1 cup Coconut — grated
- Salt, to taste
- Sugar/Jaggery powder, as needed
- Some small pieces of plantain leaves are — also required for making ada)
Preparation
Step 1
Mix the rice flour with water (preferably hot water) and salt and make a dough of it.
Step 2
Get some of the dough and put it in the plantain leaf and spread it within the leaf by applying some coconut oil/ghee/water on the palm.
Step 3
Then put some grated coconut on half part of the spreaded dough (if need sweet Ada, then add some sugar/jiggery powder on top of the coconut.
Step 4
Fold the leaf.
Step 5
Heat the Dosa making stone or frying pan and place the folded plantain leaf containing the dough, on it and cook it in low flame.
Step 6
After about 5 to 10 minutes, turn the ada to other side and cook it further and when both side of the ada is cooked well take it out from the stone/pan, take the Ada from the leaf and change it into a plate/casserole.

This Ada can be served with morning/evening tea as tiffin.
Tip
The binding point is everything — cook the mixture just until it holds shape when pressed. Overcooked, it turns hard; undercooked, it crumbles.
