A Special Egg Dosa
Crispy on the edges, soft in the middle — this a special egg dosa is a breakfast staple across Kerala. The batter comes together quickly and the dosa cooks in under a minute on a hot tawa.
Ingredientsfor 5 servings
- Rice : 1 cup
- Urad dal : ½ cup
- Egg : 2 nos
- Onion : 3 tsp
- Salt, to taste
- Green chilly : 2 nos
Preparation
Step 1
Soak rice and urad dal for 5 to 6 hrs.
Step 2
Grind it using a mixer or grinder and add salt to it.
Step 3
Get the egg and add 2 green chilly and onion and a little salt to it.
Step 4
Mix it well.
Step 5
Heat a pan add oil to it and when it gets hot pour the dosa batter to it and upon that pour egg batter about 1 table spoon.
Step 6
Then spread it well.
Step 7
Make the both sides cooked.
Step 8
Then transfer to the serving dish.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
