Spinach With Tofu
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- ½ Packet Tofu
- Spinach leaves A bunch, Paalak
- 4 nos Garlic pods
- 1 - Green chilly pepper
- Turmeric powder A pinch
- Cooking oil
Preparation
Step 1
Open and remove the tofu from the packet. You may need only half the amount of tofu to make this dish. So slice it into half.
Step 2
Place the unused portion in a container with a lid and pour cold water to cover the tofu and store it in the refrigerator for later use.
Step 3
Sprinkle some salt on either side of the tofu that you are planning to use now.
Step 4
Heat a tbsp of oil in a non stick frying pan.
Step 5
Place the tofu on it and fry till it becomes golden brown on both sides.
Step 6
Remove the tofu from the pan and slice it into small pieces in whichever way you like it. Keep the fried tofu aside.
Step 7
This method of frying and then cutting the tofu is easier than cutting it into small pieces and then frying it. You can do it either way.
Step 8
Wash well the spinach leaves.
Step 9
Cut them into fairly big pieces and keep them aside.
Step 10
Slice the garlic and the chilly pepper into thin slices.
Step 11
Heat a tbsp of oil in a pan.
Step 12
Add garlic and sautT for a minute or so.
Step 13
Add the sliced green chillies and sautT.
Step 14
When it is cooked for a minute, add a pinch of turmeric followed by the chopped spinach.
Step 15
Sprinkle some salt to taste, Stir everything together thoroughly and cover the pan.
Step 16
Open the lid and stir the contents occasionally, until the spinach is cooked.
Step 17
Add the fried tofu and Stir everything together thoroughly.
Step 18
Goes well with rice or chappathis.
Tip
Good shallots are the backbone of Kerala cooking. They should be small, pink-purple, and strong-smelling. Large onions can substitute, but the flavour will be different.
