Sabudhana Payasam
A festive Kerala payasam that demands patience and rewards it generously. Milk is simmered for the better part of an hour, thickened with care, sweetened with jaggery or sugar, and served with a prayer that there are leftovers.

- 1/2 cup Sago/chouvvary
- 1/4 cup Sugar
- 1/4 cup Condensed milk
- 11/2 cup Milk
- 1 cup Water
- 3 nos Cardamom powder
- Milk chocolate small piece — grated
Preparation
Step 1
Get sago in a bowl. Cover it with fresh water over it. Soak it for an hour.
Step 2
After 1 hour we can see sago balls becomes double. Drain the water and set aside.
Step 3
Get milk into a pan along with 1cup of water. Bring into boil.
Step 4
Once it boils add sago in it. Let it there in a low flame until sago cooked.
Step 5
Add cardamom powder.
Step 6
Stir in condensed milk and sugar. Let it there for another 10 minutes.
Step 7
Turn the gas off. Garnish with chocolate powder. Stir everything together thoroughly and serve.
Step 8

Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
