Prawns Masala Fry
Embark on a culinary adventure that takes you to the sun-kissed shores of Kerala, where the rich tapestry of flavors unfolds in every bite of the delectable Prawns Masala Fry.
Ingredientsfor 4 servings
- 25 nos Tiger/Medium Prawns Chemmeen
- 1/2 tbsp Aniseeds (Perinjeerakam)
- 1/2 tsp Cumin seeds (Jeerakam)
- 1/2 cup Coconut — grated
- 11/2 tsp Chilly powder
- Salt, to taste
- 5 nos Small onions
- 10 sprig Curry leaves approx. one handful
- 2 tbsp Coconut oil
Preparation
Step 1
Clean the prawns.
Step 2
Grind together aniseeds, cumin seeds, coconut, chilly powder, salt and small onions, adding little water to a paste.
Step 3
Marinate the prawns with the above paste and refrigerate it for an hour.
Step 4
Heat 2 tbsp of oil in a frying pan. Add 4 - 5 sprigs of curry leaves.
Step 5
Add the marinated prawns to the pan and stir it continuously to avoid getting it burnt at the bottom of the pan.
Step 6
Flip the prawns when one side is brown and done.
Step 7
Add more curry leaves and stir it regularly, till the prawns are covered with the masala.
Step 8
Serve Prawns Masala Fry with white rice. :- The more the curry leaves, the better the dish will taste.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
