Potato Pudding With Biscuit
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 15 servings
- 2 Pkts Oreo biscuits remove the vanilla cream
- 300 g Sugar
- 500 ml Warm water
- 7 g Pudding powder/China grass
Preparation
Step 1
Arrange biscuits on the base of a circle pudding mould with diameter 20 cm.For potato layer:-2)Boil mashed potatoes, milk, sugar, salt and pudding powder together. 3)Take a few tbsp of the batter and pour it into the egg yolks and mix them very well. 4)Pour back the egg mixture into the potato batter. 5)Allow it to boil.6)Pour the potato batter onto the biscuits carefully, using a spoon. The biscuit will raise to the top. 7)Allow it to cool.For caramel layer:- 8)Heat up a pan.9)Add 150 gm of sugar and allow it to melt and turn brown. 10)Add warm water little by little. 11)Mix it well.12)Allow it to cool. 13)Add the pudding powder and the remaining 150 gm of sugar. 14)Boil them together.15)Pour the caramel batter to the potato layer, which is already cool. 16)Allow it to cool.:- You can keep it in refrigerator.
