Potato Bird`s Nest
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 3 servings
- 250 g Potato
- 100 g Bread crumbs
- 1/2 tsp Coriander powder
- 1/4 tsp Chilly powder
- Turmeric powder A pinch
- 1/2 tsp Garam masala
- Salt, to taste
- 50 g Vermicelli Semiya
- Oil As reqd — for frying
Preparation
Step 1
Pressure cook the potatoes and mash them.
Step 2
Mix bread crumbs, coriander powder, chilly powder, turmeric powder, garam masala and required salt to the mashed potatoes.
Step 3
Get a non stick pan and pour some oil. Heat the oil and stir in the potato mix. cook in low heat for 3 minutes.
Step 4
Remove from fire and make small balls. Roll each ball in vermicelli.
Step 5
Place a pan on the stove and pour sufficient oil for frying. Heat the oil and dip the potato balls and fry till golden in color.
Step 6
Potato bird`s nest is ready and serve hot with tomato sauce.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
