Pineapple Pachady
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 6 servings
- 2 cup Pineapple(cut into 1/2" square pieces) ripe
- 1/2 tsp Turmeric powder
- Salt, to taste
- 1 cup Coconut — grated
- 1 nos Dry red chilly (Kollamulaku)
- 1 tsp Mustard seeds — crushed
- For seasoning
- 2 tsp Coconut oil
- 1/2 tsp Mustard seeds
- 3 nos Dried red chillies — cut into 6 pieces, kollamulaku
- 1 sprig Curry leaves
Preparation
Step 1
Cook pineapple along with turmeric and salt in 1/2 cup of water.
Step 2
Grind coconut with dried chillies to a fine paste.
Step 3
Pour oil into a pan and heat it or a kadai.
Step 4
Let the mustard seeds crackle.
Step 5
Add the coconut paste and sauté.
Step 6
Add curry leaves and dried red chillies and continue to sauté.
Step 7
When it is done, add the boiled pineapple pieces.
Step 8
The gravy should be thick and the cover the pineapple pieces.
Step 9
Add the crushed mustards, just before removing the pachhady from the flame.
Tip
Taste as you go. Recipes are guidelines — your palate is the final judge. Adjust salt, sourness, and heat to what tastes right to you.
