Mixed Spring Roll
A robust chicken preparation where the meat absorbs a pounding of Kerala spices and slow-cooked onions. The curry leaves and coconut oil make it unmistakably from this part of the world.
Ingredientsfor 3 servings
- Chicken breast 1/2 kg
- Spring onion 1 bunch
- Carrot 1
- Beans 1 cup
- Soya sauce 2 tsp
- Pepper powder 3 tsp
- Green chilly 5
- Bread crumps 1 cup
- Leaf 10
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Cook chicken using salt and pepper.
Step 2
Then grind the chicken using a mixer.
Step 3
Then slice vegetables.
Step 4
Heat a pan add oil and then add chicken green chilly.
Step 5
Next, add carrot beans.
Step 6
Stir it and add spring onion.
Step 7
Give it a good stir and add pepper powder.
Step 8
Add soya sauce.
Step 9
Give it a good stir.
Step 10
Our masala is ready,now take the leaf for spring roll.

Then fold it by adding masala inside it.
Step 12
Then mix with egg and roll it on bread crumps.
Step 13
Then do the same with remaining masalas.
Step 14
Then heat a pan add oil and start frying.
Step 15
When both sides get deep fried and brawn.
Step 16
Get it outside and wipe off excess oil.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
