Mashed Potato Fry
Slow-roasted in coconut oil with a generous hand of spices, this potato fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 4 servings
- 3 nos Potato large — mashed
- 1 nos Onion — chopped
- 2 tsp Chilly powder
- Salt, to taste
- 1 tsp Mustard seeds
- Curry leaves, a few
Preparation
Step 1
For preparing mashed potato fry, first mash well the potatoes.
Step 2
Mix chilly powder, required salt and chopped onion.
Step 3
Pour oil into a kadai and heat it and let the mustard seeds crackle.
Step 4
Add the potato mix and fry it in low flame till it becomes dark and crispy.
Step 5
Add curry leaves and fry it.
Step 6
Side dish for curd rice.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
