Kumbalanga Olathu
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 2 servings
- 1/2 1/2 (Kumbalanga)
- Shallot. 8
- Curry leaves. 1 sprig
- Dried red chilly powder. 2 tsp
- Salt, to taste
- Mustard. 2 tsp
- Oil, to taste
Preparation
Step 1
Heat a pan pour oil and add mustard when its hot.
Step 2
When mustard allow to crackles add shallot and curry leaves.
Step 3
Add chilly powder.
Step 4
Cook it, stirring well then add kumbalanga and salt.
Step 5
Give it a good stir and close the pan.
Step 6
Make the flame low and wait until it gets cooked.
Step 7
Our dish is ready.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
