Kovakka Olathu With Coconut
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 3 servings
- Kovakka : 1 cup
- Onion : 1 no
- Mustard : 2 tsp
- Coconut : 1 tsp
- Turmeric powder : 1 tsp
- Chilly powder : 2 tsp
- Salt, to taste
- Oil : 1 tsp
- Curry leaves : 1 spring
Preparation
Step 1
Heat a pan add oil in it when it gets hot add mustard and wait till it gets allow to crackles.
Step 2
Next, add onion,coconut and curry leaves to it. Stir for 2 minutes and set aside.
Step 3
Then cook kovakka using little water,salt,turmeric powder and chilly powder.
Step 4
When it gets cooked stir it well.
Step 5
Next, add the onion matter to it.
Step 6
Give it a good stir and keep for 2 minutes.
Step 7
Serve while still hot.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
