Khus Khus Payasam
The kind of payasam that appears at every Sadya and disappears first from the banana leaf. Slow-reduced milk, a touch of sweetness, and the warmth of cardamom — simple in concept, extraordinary in taste.
Ingredientsfor 3 servings
- 1 tbsp Rice
- 1/2 cup Coconut — grated
- 2 tbsp Khus khus
- 1 cup Milk
- Cardamom powder A pinch
- 1 tsp Coconut — chopped
- 3/4 cup Jaggery Sharkara
- Ghee, to taste
Preparation
Step 1
For preparing khus khus payasam, soak khus khus and rice separately for 10 minutes.
Step 2
Grind khus khus and rice with grated coconut.
Step 3
Set a pan on the stove, boil little water and add the paste.
Step 4
Give it a good stir without lumps.
Step 5
In another pan, mix jaggery and water.
Step 6
Strain and transfer it to ground coconut mix.
Step 7
Add boiled milk into it.
Step 8
Season with cardamom powder and coconut pieces fried in ghee.
Step 9
Khus khus payasam is ready.
Tip
The payasam will thicken significantly as it cools. Stop cooking when it is still slightly thinner than your target consistency.
