Kerala Special Fish Fry (Meen)
Kerala-style dry fry where fish is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 2 servings
- Fish (mullan) 3 pieces
- Chilly powder 3 tsp
- Turmeric powder 1tsp
- Coconut powder 2 tsp
- Cornflour 2 tsp
- Curd 1 tsp
- Salt, to taste
- Ginger garlic paste 1 tsp
- Oil, as needed
Preparation
Step 1
Mix the fish with all ingredients.
Step 2
Then keep it for 15 mint.
Step 3
Then heat a pan add oil and fry it.
Step 4
Make the both sides get brawn and cooked well.
Step 5
Wipe off excess oil.
Step 6
Transfer to the serving dish.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
