Kerala Easy Mushroom Thoran
Finely chopped mushroom stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 2 Pkt) Button mushrooms
- Coconut, to taste — grated
- 10 nos Small onions (Kunjulli)
- 4 - Red chillies (Kollamulaku)
- Salt, to taste
- 1 - Olive oil
- 1 tsp Mustard seeds
Preparation
Step 1
Slice mushrooms into long slits.
Step 2
Grind together small onions, red chillies and coconut into a coarse mixture.
Step 3
Heat up a pan or a kadai.
Step 4
Cook mushrooms, along with the mix, without adding water.
Step 5
Add salt and Stir everything together thoroughly.
Step 6
Heat olive oil in a pan or a kadai.
Step 7
Let the mustard seeds crackle and broken red chillies.
Step 8
Pour the above seasoning into the mushroom mix.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
