Kerala Brinjal Prawns Curry
A deeply satisfying kerala brinjal prawns curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 3 servings
- 1 cup Brinjal — sliced
- 1 piece Cinnamon (Karugapatta)
- 5 nos Cloves (Grambu)
- 8 nos Cardamom — crushed
- 1 nos Onion — chopped
- 1 tbsp Vinegar
- 1 nos Tomato — chopped
- 1/2 cup Prawns cooked with salt and turmeric
- 11/2 cup Coconut milk
- Salt, to taste
- 1 nos Onion
- 4 Cloves Garlic
- 1 piece Ginger
- 1 tsp Cumin Seeds (Jeerakam)
- 1 tsp Turmeric powder
Preparation
Step 1
For preparing kerala brinjal prawns curry, soak brinjal in salt water. Drain brinjal after some time and fry it in oil.
Step 2
Grind the ingredients for preparing masala.
Step 3
Cook cinnamon, cloves and cardamom in oil.
Step 4
Add oniion, ground masala and tomato. Fry well.
Step 5
Add prawns, vinegar and fry again.
Step 6
When oil clears, add the fried brinjal and curry leaves.
Step 7
Cook in low flame for 5 minutes.
Step 8
Kerala brinjal prwans curry is ready.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
