Kadala Curry In Naadan Style
This homestyle quail curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 6 servings
- Dal (kadala) : 1 cup
- Onion : 1 no
- Ginger : 1 inch piece
- Curry leaves : 2 spring
- Garlic : 3 cloves
- Mustard : 2 tsp
- Coriander powder : 1 tsp
- Chilly powder : 2 tsp
- Turmeric powder : 1 tsp
- Salt, to taste
- Water, to taste
- Oil : 1 tsp
Preparation
Step 1
Soak kadala for 5 to 6 hours in water.
Step 2
Then heat a pan add oil in it and when its hot add mustard in to it.
Step 3
When it allow to crackles add onion, garlic and ginger to it.
Step 4
Give it a good stir and then add curry leaves to it.
Step 5
Next, add salt,coriander powder and stir for 2 minutes.
Step 6
Next, add chilly powder, turmeric powder and give it a good stir.
Step 7
Next, add the soaked gram dal to it and give it a good stir add 1 cup water or as needed.
Step 8
Then close the pan or pressure cooker until it gets cooked.
Step 9
When it gets cooked transfer to the serving dish.
Step 10
For cooking it will take only 15 minutes if its in a pressure cooker.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
