Drumstick Leaves-Egg Thoran
Finely chopped egg stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 2 servings
- 4 nos Egg
- 1½ cup Drumstick leaves
- 2 nos Tomato — finely chopped
- ½ cup Coconut — grated
- 2 nos Green chillies — finely chopped
- ½ cup Small onions — finely chopped
- 2 Stalks Curry leaves
- Ginger garlic paste – 1 tsp
- 1 tsp Mustard seeds
- 1 tsp Coriander powder
- 1 tsp Turmeric powder
- 3 tbsp Coconut oil – 2
- Salt, to taste
Preparation
Step 1
Beat eggs in a bowl with a little salt and set aside.
Step 2
Wash and clean the drumstick leaves by removing the yellow ones and the thick stems.
Step 3
Warm the oil in a pan.
Step 4
Allow to crackle the mustard seeds.
Step 5
Add ginger-garlic paste, green chillies, curry leaves and small onions and sautT.
Step 6
When onions become transparent, add turmeric powder and coriander powder.
Step 7
Add the chopped tomatoes and sautT for a while.
Step 8
Add little water and salt and boil.
Step 9
Add the drumstick leaves and keep stirring continously until the leaves are cooked.
Step 10
Add the grated coconut and sautT for a few seconds.
Step 11
Lower the heat and add the prepared eggs and scramble it until it¦s done to your liking.
Step 12
You can serve Muringayila-Mutta Thoran as a starter and also along with rice.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
