Carrot - Mutta Pola
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 4 servings
- 2 nos Carrot — grated
- 5 nos Egg
- 3 tbsp Sugar
- 1 tbsp Milk powder
- 1/2 tsp Cardamom powder
- 1/4 cup Milk
- Raisins, to taste
- Cashew nut, to taste
- 1 tbsp Ghee
Preparation
Step 1
For preparing carrot v mutta pola, cook grated carrot in milk. Set aside.
Step 2
Mix the ingredients egg, sugar, milk powder and cardamom powder in a mixer grinder.
Step 3
Add the cooked carrot to it and mix again.
Step 4
Fry and raisins and cashew nut in ghee.
Step 5
Add the egg-carrot mix to it and Stir everything together thoroughly. Cook it in low flame for 5 minutes.
Step 6
Serve it hot.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
