Bread Pakoda - Soft And Spongy
Deep-fried until the outside shatters at the first bite and the inside stays soft and flavourful. A tea-time favourite across Kerala, especially when the monsoon rain is hammering the roof.
Ingredientsfor 2 servings
- 4 nos Bread Slices — cut into triangular halves
- 5 tbsp All purpose flour Maida
- 2 tbsp Sugar
- 1/4 tsp Salt
- 1 tsp Red Chilly Powder
- 1/4 tsp Turmeric powder
- 1 small Fenugreek powder (Uluva)
- 1 nos Egg
- 1 cup Water
- Sunflower/Coconut Oil for frying - just enough to dip the bread slice while shallow frying
- Kitchen tissue paper to soak extra oil
- Tomato ketchup (while serving, if preferred
Preparation
Step 1
Mix maida, sugar, salt, chilly powder, turmeric powder, fenugreek powder(optional) in a bowl.
Step 2
Add an egg into this mixture beating it slowly.
Step 3
Now slowly add water to this mixture ensuring that the consistency is thick but not too watery.
Step 4
Warm the oil in a pan.
Step 5
When oil is hot enough and ready for frying, dip the bread halves one at a time and fry it. Don`t keep the bread slices in the mixture for too long. Also, ensure that the bread slices are equally covered in thin batter.
Step 6
Simmer the stove if needed so that the color of the fried slices remain slightly brown or even yellow.
Step 7
Place the fried slices on tissue or kitchen paper and soak up all the extra oil. The fried slices are soft and slightly sweet to taste.
Step 8
Serve this along with tomato ketchup(if preferred).

Bread pakoda is a quick evening snack and a saviour when you have unexpected visitors.
Tip
Drain on a wire rack instead of paper towels — the rack keeps the bottom from getting steamy and losing its crispness.
