Bachelors` Chicken
A robust chicken preparation where the meat absorbs a pounding of Kerala spices and slow-cooked onions. The curry leaves and coconut oil make it unmistakably from this part of the world.
Ingredientsfor 2 servings
- 6 piece Chicken legs
- 2 nos Onions — chopped
- 3 tbsp Tomato paste
- 1 nos Potato
- 1/2 tsp Garlic powder
- 1/2 tsp Ginger powder
- 2 tbsp Chicken Masala powder
- 1 tsp Chilly powder
- Salt, to taste
Preparation
Step 1
First, you need to have all these powders that I have mentioned. Basically it reduces the time & effort chopping tomatoes/ginger/garlic etc. Unfortunately I didnt find `Onion powder` yet. But those folks who can get them somewhere can replace it with the chopped Onions.
Step 2
Heat the oil in a pressure cooker.
Step 3
Fry the chopped onions until golden brown.
Step 4
Add the rest of the ingredients and stir along with chicken.
Step 5
Pour 1/2 glass of water and let the pressure cooker whistle 2-3 times.
Step 6
If you feel too hungry carefully take the pressure cooker into the kitchen sink and pour cold water on top to reduce the pressure inside and gain quick access to BACHELORS-Chicken!
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
